Salmon Cobb Salad
Servings: 2
Ingredients:
Dressing:
3 tbsp red wine vinegar
1 tbsp avocado oil
1 tbsp Dijon mustard
1/4 tsp salt
1/4 tsp pepper
Assembly:
2 cups romaine lettuce, chopped
1/2 avocado sliced
1/4 cup cherry tomatoes, halved
3-4 strips bacon, chopped (regular or turkey)
3 boiled eggs
2 Persian cucumbers, sliced
1 large salmon filet, pan fried with salt and pepper
Directions:
1. Assemble your salad.
2. Make your dressing in a blender or whisk in a large mixing bowl
3. Add your dressing on top of your salad and enjoy!
