Keto Lemon Mug Cake
I'm the biggest lemon lover, and when I say that this is the BEST lemon mug cake, I've ever made...I couldn't wait but share!!
Keto Lemon Mug Cake with Lemon Glaze Recipe:
Ingredients:
Lemon Mug Cake:
1 tbsp butter, melted
3 tbsp almond flour, packed
½ tsp baking powder
1 tbsp sweetener (use your sweetener of choice, I used granular monkfruit in this one)
3 tbsp egg whites (OR 1 egg white)
1 tsp lemon juice
1/8-1/4 tsp lemon zest
Lemon Glaze:
1 tbsp cream cheese, softened
1 tbsp powdered sweetener (you can use granular too)
1 tbsp heavy cream
1 tsp lemon juice
1/8 tsp lemon zest (if you want hints of lemon, use less zest)
Directions:
Add ingredients for mug cake into a mug, mix thoroughly and microwave for 1 min 20 secs!
For the glaze, mix until well combined!
